Francescos has to be one of my favourite restaurants in the world - their ceviche de lenguado has to be one of the most sublime dishes in creation - worth a trip there (to Lima) just to try it. My friends kids who had refused to eat fish till then were converted by lunch at Francescos!

lenguado is skate.

Francesco's have probably patented the recipe - but I believe that there are scallops leeks in there -Ax
