Deliciosos platos en peru: Pastel de Choclo

Pastel de Choclo

As made by Maria last night for dinner with sausage, carrotts and green beans with a light vinegrette! Choclo, known as maiz, is like a very large sweetcorn. I translated the recipe with Maria´s notes myself so it may not be perfecto...

Ingredientes:

6 choclos- maiz
3 cucharadas de azucar- (tbsp) sugar
3 cucharaditas de polvo para hornear- (tbsp) baking powder
1/2 taza de azucar para espolvorear- (cup) sugar for sprinkling
1/4 kg de queso fresco- fresh cheese
1/2 taza de manteca- (cup) lard
6 huevos- eggs
1 cucharada de chuno- (tbsp) very fine potato powder (Maria says optional but she doesn´t) Sal

Preparacion:

Liquidize the chiclos. In to a large cup (or bowl), add the sugar, salt and melted lard. Mix vigorously. Whisk the egg whites very well. Incorporate the yokes one after the other, mixing softly. Add the very fine potato flour, baking powder and sieve.
Empty out the liquidized maiz and mix.

Grease a dish 25cm x 15cm. Pour half the mixture in to the dish. Add a layer of cheese slices, cover with the rest. Sprinkle the top with sugar. Keep in the oven on a moderate heat (350F o 175C) for 45 minutos!
