Deliciosos platos en peru: Estafado de pollo

Estafado de pollo

I had this dish, as made by Maria, on my first day in Lima and I absolutely loved it- ´estafado´ can mean stew or stuffed and for this dish it means stew! Again, my own translation of the recipe so lets hope..

Ingredientes:

8 presas de pollo- pieces of chicken
2 tomates pelados y picados- tomatoes peeled and chopped
1/2 taza de harina sin preparar- cup of flour
1/2 taza de aceite- cup olive oil
1/2 taza de oporto o vino dulce- cup of ? or sweet wine
1 taza de cebolla picada- cup chopped onion
1 cucharadita de ajos picados- tbsp chopped garlic
1 cucharada de pasta de tomate- tbsp tomate paste or puree

1/2 taza de zanahorias en rodajas- cup sliced carrotts
1/2 taza de arvejas- cup peas
2 cucharadita de pasas- tbsp raisins (Maria says optional)
canela- cinnamon
sal y pimienta- salt and pepper

Preparacion:

Season the chicken with salt and pepper, cover the chicken with flour and fry at a good heat. Once golden, withdraw. In the same oil, golden the onion and garlic. Add the chopped tomatoes together with the tomato paste. Afterwards, add chicken, peas, carrotts, raisins, cinnamon and sweet wine. Add salt and pepper and cook slowly on a low heat.

Serve with rice and potatoes.
